Aquiares Estate lies on the slopes of the Turrialba volcano in Costa Rica, where volcanic soils, high elevation and a tropical climate create favourable conditions for coffee cultivation. The estate grows Centroamericano, a hybrid of T5296 and Sudan Rume developed for its potential to combine high cup quality with resilience. For this Natural lot, the coffee cherries are dried whole, allowing the fruit to influence the coffee as it dries.

Diego Robelo is pushing Aquiares beyond traditional coffee farming. He has introduced new coffee varieties through research trials with World Coffee Research and CATIE, developed specialty microlots, and diversified the farm into cacao, chocolate and essential oils. He has also helped advance carbon-neutral farming and regenerative agriculture, building a model that combines coffee quality, environmental protection and new opportunities for the local community.

Diego has transformed former full-sun coffee fields into a living agroforestry system, planting more than 50,000 native shade trees among the coffee. Vegetation along streams helps protect waterways, while 200 hectares of protected rainforest and connected wildlife corridors provide habitat for native plants and animals. The estate now records more than 130 bird species, showing how coffee production can support a richer, more connected ecosystem.
