Jose Uribe Lasso COE #6 - Colombia - Natural - Aji - Filter

This incredible Bourbon Aji or 'Chilli Bourbon' took 6th place in the 2023 Cup of Excellence competition. Expect a winey, tropical cup full of red fruit, citrus, and spice.

Jose’s Aji scored at an astonishing 89.56 points and was the only variety that wasn’t Gesha to make the top 6.

Farm

Jose purchased El Triunfo 30 years ago. As a 14 year-old boy he would pick coffee after school and he saved up enough money to eventually buy his own plot.

Region

Huila is geographically perfect for coffee growing and is quickly becoming one of Colombias biggest coffee growing regions.

Cup of Excellence

Jose’s Aji was the only coffee that was not a Gesha to make the top 6 in Colombia’s 2023 Cup of Excellence.

El Triunfo is a 14 hectare plot that sits at 1780 masl.

Variety

Bourbon Aji or ‘Chili Bourbon’ was named for it’s spicy character. It was believed to be a Bourbon mutation, but genetic testing suggests it is an Ethiopian landrace variety.

Process

Fully-ripe cherries have an 18hr oxidation phase before a 30hr anaerobic fermentation, a secondary oxidation of 28hrs, a 'stalling' phase and finally multi-stage drying in a controlled environment. Every stage of the fermentation is done at a controlled temperature.

These auctions have allowed producers, whether award winning or not, to realize a greater financial price for their coffees. Prices from the auctions have been multiple times higher than the traditional method of selling and records are being broken every year. The Cup of Excellence auctions have increased the overall value of top specialty coffees globally - not just for the COE coffees.

Bourbon Aji or ‘Chili Bourbon’ was named for it’s spicy character. It was believed to be a Bourbon mutation, but genetic testing suggests it is an Ethiopian landrace variety. Among the list of varieties discovered in Huila with Ethiopian heritage are Pink Bourbon, Chiroso, Wush Wush, Ombligon, and this Aji.
